- 2 TBSP EVOO
- ½ Sweet Onion
- 2 Cups Rice (I used Brown Basmati)
- 1 Can Organic Diced Tomatoes
- 1-2 Cups Frozen Organic Corn
- 2-4 Cups Organic Vegetable Broth
- 1 Tsp (or more) Cumin
- 1-2 Garlic Cloves
- Fresh Chopped Cilantro to taste
Heat large skillet over medium heat and drizzle with Olive Oil. Add in the diced onions and cook for a few minutes, until translucent. Turn heat down to low. Add 2 cups of rinsed rice and cook until slightly browned. Stir in 1 can of organic diced tomatoes, 1-2 cups frozen organic corn, and 2 cups of organic vegetable broth. Add in 1 tsp cumin, some freshly chopped garlic, and any other seasonings you enjoy. Cover and reduce heat. Stir periodically, you may need to add in more broth, and cook until rice is tender. Top with fresh chopped cilantro.
This makes a great side or a maybe top it with some grilled chicken and jalapenos for a delicious main dish.
