These roasted veggies are a simple summer treat. They go well as a side dish to burgers, chicken or whatever you love to cook on the grill! Pick up some summer veggies at your local farmer’s market (zucchini and squash are two of my favorites) and make sure to clean and dry them well before using!
Method:
- Cut lengthwise into large strips or hunks.
- Lightly coat with olive oil and salt and pepper.
- Toss on the grill. Or, if you want to roast them in the oven, line a baking sheet with parchment paper and roast at 425 for 20-30 minutes.
