Refreshing Summer Coleslaw

This refreshing coleslaw was a big hit at a recent backyard barbecue. It was absolutely delicious, packed full of nutrients, and quite refreshing on a hot summer day. What made it even better was that it was made with mostly local ingredients from that weeks CSA.

Refreshing summer coleslaw (slightly modified from Fresh Fork’s recipe)
1/2 small head cabbage, shredded
1 cup snow peas, thinly sliced
6 scallions or small onions, thinly sliced
2 T chopped, toasted hazelnuts (don’t skip the toasting!!)
2 T chopped parsley
1 T poppy seeds
Combine all in a large bowl
In a small bowl, whisk together:
Juice of 1/2 lemon
3 T sunflower oil (I usually cut down on oils in recipes, but this needed all 3 tablespoons)
1/4 t salt
1/4 t pepper (I used a hefty shake of ground cayenne)
Toss with slaw & dig in!
