This crockpot pot roast was sooooooooo good AND super simple! Chop an onion and several cloves of garlic – line bottom of crockpot. Place roast on top. Season with salt and pepper, some parsley and rosemary. Add 2 cups veggie broth. Cover and turn on low for 8 hours. Midway through add in several carrots and one head of cauliflower – both chopped. Sautéed up some Swiss Chard on the side
