Pesto!

pestoBasil is in season in the summer months. It is an easy to integrate herb which compliments a number of dishes including salads and smoothies. Basil is loaded with phytonutrients and has a long history of being known as a medicinal herb. Enjoy this nutritious super star with its immune boosting, anti-inflammatory benefits in a simple to prepare and easy to enjoy pesto recipe.

In a food processor combine 6 cups of gently packed basil leaves, 1/2 cup pine nuts or walnuts, 1/2 cup Parmesan cheese, 1-3 garlic cloves, 1/4 tsp salt, 1/2 cup EVOO.  Blend until fully combined into pesto sauce, scrape down sides as needed. Enjoy immediately or store in fridge for a few days, freezer for a few months.

My favorite way to enjoy pesto is with some pasta and sauteed shrimp – so good!
