Lentil Mushroom Stir Fry

Speaking of healthy food, the Lentil Mushroom Stir Fry is a simple and quick meal that feels hearty and satisfying at the end of a long day. Lentils are rich in iron, folate, fiber and protein. Beet greens are a great source of protein, zinc, fiber, and are high in B vitamins and other vital nutrients. If you are trying to conceive, balance your weight, or simply wanting to enjoy a delicious nutrient packed meal, then this stir fry is for you.
Ingredients:Lentil stir fry
  • 1 cup of lentils
  • 2 TBSP extra virgin olive oil (EVOO)
  • 1 bunch of beet greens, chop stems and greens separately
  • 1 yellow pepper, chopped
  • 1 onion, chopped
  • 8 oz shiitake mushrooms
  • 2-3 cloves garlic
Cook 1 cup of lentils per package directions.
While lentils are cooking, drizzle EVOO into a pan over medium heat. Add chopped onion, stems of beet greens, and the yellow peppers. Sauté for 5 min. Add mushrooms and garlic, and sauté for 3 min. Then add chopped leafy greens and sauté for 2 additional minutes. Once lentils are done, add to mushroom mixture and continue to sauté to combine thoroughly. Season with thyme salt and pepper.
