Granola Recipe

Granola is a favorite around here so it’s something I make on a pretty regular basis. Today I’m sharing my favorite recipe—good news, it’s versatile so you can use this as your jumping off point and tweak it as you go.


  • 4 cups old fashioned rolled oats
  • 1 cup chopped pecans
  • 1/2 cup raw pumpkin seeds
  • 5-6 TBSP maple syrup
  • 3-4 TBSP coconut oil
  • 1 tsp vanilla extract
  • 1/4 tsp (several twists) Himalayan pink salt

Preheat oven to 300º F. Combine all ingredients in a large mixing bowl and use your hands to mix well. The coconut oil will warm and melt during the hand mixing process so make sure you toss thoroughly to coat all ingredients. Spread mixture on a baking sheet and bake for 15 – 20 minutes. Cool and enjoy! This will store well in your fridge in an airtight container for a few weeks.
