Need a quick meal? How about fried rice? Just as long as you cook the rice in advance!
Ingredients:
- 2-3 cups of rice (I used a combination of Jasmine and Basmati, but use whatever you have on hand to keep it fast and simple)
- 1 chopped onion
- 1 bunch chopped asparagus (zucchini is great too)
- 1 small carton of mushrooms (baby portobellos or a mix are my go to)
- 3 eggs
- 2 TBSP Tamari soy sauce
- Salt & pepper to taste
Prepare rice as directed. Drizzle EVOO in a frying pan and turn to medium heat. Add chopped onion and cook until onion is translucent, about 3-4 min. Add in asparagus and/or zucchini and lightly saute, about 1-2 min. Add in rice. Add in eggs, and let cook for 1 min. Then stir the mixture, and continue to let it cook for 3-4 minutes. Add mushrooms and cook for an additional 3-4 minutes. Add soy sauce and salt and pepper to taste. Stir to combine and serve.
This is also great with some chicken or shrimp.
