I have not loved, liked, or enjoyed Brussels sprouts for most of my life. I vaguely remember some not so great go round with them as a kid, and then avoiding them ever since. I was perfectly content to never eat these little baby cabbages ever again. But then a few years ago Mark ordered them at a restaurant, so I thought I would give them another try…wow, had I been missing out?! They were fantastic!!! Since that time, they have become a go to in our household. We enjoy them regularly at home, prepared very simply. If you have been avoiding these delicious & nutritious beauties (they are one of the least liked veggies, but an absolute nutritional powerhouse), I urge you to give them another try.
My favorite way to prepare Brussels sprouts is by roasting them. I simply lightly drizzle them with some avocado oil, salt, and pepper then hand toss to lightly coat (actually I usually just shake the roasting dish around a bit). I roast them in a 425 degree oven for 20-30 minutes. You can also steam them or thinly slice them uncooked and enjoy in a salad. Give ’em a try and let me know what you think!
By the way, Brussels sprouts are also on several lists as a baby making superfood, supporting both male and female fertility so if you are trying to conceive be sure to add these to the grocery list!
