I am starting my morning with a leg workout at the gym then a walk with a friend and my dog so I need a nutritious breakfast.  I came out to make a smoothie only to remember that I am out of bananas.  Surprisingly I have not yet ventured into the avocado in my smoothie realm but today was the day.  Let me tell you I am grateful I was out of bananas!!!!!!!

This smoothie has a velvety texture and is absolutely delicious.  I used apples from my CSA, an avocado, organic kale, frozen pineapple, coconut water, and chia seeds.  I plan to enjoy this smoothie as my breakfast and lunch (I have a meeting around lunch so I need to get my lunch in on the drive) so it’s extra large.  If you are making this just as a single serving I would encourage you to halve the ingredients.  Enjoy!!!

  • 1 avocado
  • large handful of kale
  • 2-3 apples
  • 16 fl oz coconut water
  • 1 1/2 cups frozen pineapple chunks
  • 2 TBSP chia seeds
  • Blend and enjoy!!!
